Want to learn tips for maintaining food safety? Tomato Tornado is coming to Tellico Plains Community Center Monday, June 30th Come join the Get With It staff in this deliciously tasty discussion! Couscous with Tomatoes and Spinach 1/4 cup of water Several cloves of garlic 1 casserole dish Ingredients: 1 box couscous (plain or flavored) 1 medium can chopped (organic) tomatoes 1 or 2 bags (cartons of fresh spinach) (to taste) Put one layer of couscous on the bottom of the dish. Add a layer of the tomatoes. Then add a layer of the spinach/ garlic mixture. Complete with one more layer of each and top with a cheese of your choice (Parmesan). Put mixture in hot oven for about 15 minutes until completely hot Directions: Follow directions to prepare couscous and set aside. Add 2 tbsp. of olive oil to saucepan. Chop 1/2 onion and several cloves of garlic to taste. Brown onion and garlic in olive oil and then add the spinach. Add the water to the browned garlic and spinach mixture Serve with fresh fruit. (Suggestions mango and papaya) Enjoy this wonderful and easy dish for a summer meal!
